Keep the build going, sounds interesting

Just a thought could one of the condensers be braking down? you'd still get spark but would not run correctly, my old gs550 suffered that a lot

Welcome @DaveV65
Old ef still fun
-
Soaking them with a bit of penetrating oil and some heat should help get them out but a lot of it is down to luck as @spiderpigsaid
Also the condition of them can be a factor, if they are totally trashed they always harder to remove
-
Probably to simple but often gets overlooked but is your tank venting OK seems strange that all your taps are failing at the same time but runs OK on auxiliary tank

As above if you have 1 & 4 2&3
Should play ball check for any damage to the wires and turn the motor over and check points are opening, might just want a little adjustment

You can learn by watching, informing and doing, start small, and like others have said use the Internet and your phone to take video or pics
And give yourself time, if you rush you will probably fuck up (though everybody has) and if a job is going to take a few days, make a note of where you have got too so things don't get missed
But most importantly have fun and enjoy it
Motorbikes are addictive

Maybe the 'new' efe has OEM clutch springs and your other bike has heavy duty springs. This would explain why the clutch on the newer bike has a lighter clutch.
You could be right,

Started up nice and smooth
Though chain rubbing on back of foot pegs and pingle tap needs mods to stop it being permanently on, just checking every bolt be for a road test on a quiet Sunday night

Bit of work to do there! Will it start?
Will find out tomorrow when I have a day off, little jobs done in between night shifts is drain fluids strip brakes, check wiring, for obvious breaks, has dyna coils and ignition, pingle fuel tap nice high lift cams, turns over OK

Do you have a spare draw-thru?
Will see if it runs
Plan is to use my universal number plate and road test if running

Any updates love this build

Glad you decided to strip it down and have got it sorted

Big old 4 into 2 if I remember right any of the gsx 750 exhausts from the early 80s should fit, think Marvin do a nice replacement for about £350 which would save you some cash and weight

Sounds like your having fun
More power to you

I will say yes,had screen engine in slingy and have a slingy in a slabside but I'm sure someone more knowledgeable will be along soon to confirm
-
Powerscreen are cheap at the moment so if you pick up a runner you can cut down its loom and save a few pennies, you will be surprised what is still out there on dodgybay, facache and other local sites
