Rookie question...
Are Suzuki's tanks interchangeable? More specifically, if I decide to change the tank of my 84 GS750, what would be a direct fit?

No sorry, tanks are not all the same.

Other tanks can be made to fit but the gsx750 (over here we call the 16v gs750 a gsx ) if your thinking of putting a older tank like a gs750/850/1000 (8v) the tank tunnel may fit but you may find you need to adapt the front/rear mounts.

I'm shore I've seen a gsx750es with a gs tank on it in the past, but I can't tell you if, they needed to modify it or not.

I guess I would need some images from the bottom of the tanks, which no one remembers to post...

Here's a picture of the underside of my GSX1100 ESD tank, whilst I don't think this style of tank would suite your bike the cutouts may be similar to other GSX models?

This does indeed look very similar to the one on my bike.
A quick search for the model of your bike, shows the Katana version, which has a very similar looking tank as the 83+ 750's, like mine.

If this is correct, does it "need" the side covers, or does it also have an empty spot between the seat and the tank?

Yes it really needs the side panels as well as the bottom rear of the tank comes down quite a lot, here's a picture;

Yeah... thought about cutting the side panels, but I am missing the top tap, on the right side panel... already bought some epoxy glue to chop one off and try to glue it where I need it... we'll see how it goes...
