IMO get a new stator and regulator. Old wires and electronics in harsh environment are ready for a swap. If not you might get the domino effect: change one thing, than this affect the next thing after a short period of time. At least check all connections, and treat with anti corrosive, and electrical grease after cleaning.
New rr is not that expensive (avoid cheap stuff). A lot of good information in this forum for upgrades.
Ricksmotorsportelectronics in the US have a few options for upgrades.
Wemoto.com in the UK is also recommended, cheaper than ricks.

I'm currently using a Dyna S ignition system. The old system was function perfect, but I'm using my bike for commuting, and I really need it to work. So I made a new wiring harness, and swapped all electrical components.
I cannot tell the difference, other than my bike starts easier.
It kicks right at it with refurbished starter motor, new relay and ignition system.
Easy to install.
I've heard that the quality is poor. It might be. Haven't had it not than one summer

I've been wondering the same myself for a gs1000. In the end sound of Marving is not my ideal sound. That's only my opinion after checking out some sound samples on YouTube. It was too baaafhh
I prefer Delkevic, VH etc. Got an old Marshall system on her now. Sounds deep and neat. Staying on for now

There's also a lot of used parts in Norway at finn.no
I prefere Wemoto.com for service parts.
Fleabay is frequently used as well. Use jet carrier.com for transport from us to Nordic countries.

As Dezza says, look for corrosion. Revving = vibrations. Bad/loose connection can show.Try electronic cleaning connection blocks and then use battery pole grease

Sparks getting wet with only light cranking if it gets sufficiently fuel. Looks like a fuel problem, which is good, a lot better than ignition.
In addition I would consider new intake boots.

Since you are new, the thing you are missing are turbo!
Are the plugs vet from gasoline, fuel is actual entering the chamber?
How did you check sparks? Could be pretty OK on top of the head but not strong enough for a running engine.
How about the cdi/ignition unit? After a decade of stands still old electronic as capacitators dries out. Could give you a hard time.
We like photos, just a friendly advise.

Also Google it. You'd be surprised what people are making and selling. If it is marked Cafe racer is probably triple price though
