Are all slingshot fairing panels interchangeable? I don't think they are but I'm not sure.

No. J/K/L tailpieces (750 and 1100) are all interchangeable, so are M/N tailpieces, everything else is model specific. But might be persuaded to fit with some work, I have a 750J fairing on my 750L, only the bottom mounts needed modifying a bit.

1100 fairings are higher than 750's, because of clip-ons above top yoke.
